  • 1 cup almonds
  • 1 cup cashews
  • 1 1/2 cups chocolate chips
  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 1 cup gluten free granola
  • 1 tablespoon olive oil
  • 1 cup quinoa, rinsed
  • ¼ teaspoon salt


  1. Line two baking sheets with parchment paper
  2. Set aside.Pour olive oil into a skillet and heat to medium
  3. Add quinoa and cook for 6 to 8 minutes, stirring often, until quinoa begins to turn golden brown
  4. Transfer to a small bowl
  5. Place granola in another small bowl.Melt chocolate in the top of a double boiler
  6. (A metal bowl over a pot of boiling water will work too.) Be careful not to allow water to touch the chocolate
  7. Once the chocolate is melted, stir in the saltPour half of the melted chocolate over the quinoa and half over the granola
  8. Stir each to oat and transfer to the prepared baking sheets
  9. Refrigerate until set
  10. Break into bite size chunks and place in a large bowl
  11. Add cashews, almonds, cherries and cranberries and mix until combined
  12. Store in an airtight container.
