  • 2 large apples, cut into wedges
  • 6 ounces chocolate, chopped fine
  • 1 tablespoon coconut oil
  • 1 tablespoon coconut palm sugar
  • 1 tablespoon lemon juice
  • 1/4 cup quinoa, rinsed
  • 1/4 cup regular or gluten free oats
  • 1 cup water


  1. Line a baking sheet with parchment or wax paper
  2. Combine lemon juice and water and add apple wedges
  3. Toss to coat and set aside
  4. Heat coconut oil over medium heat
  5. Add quinoa, oats and coconut palm sugar
  6. Toast stirring frequently for 5 to 7 minutes or until quinoa is golden brown
  7. Place in a shallow dish and allow to cool slightly
  8. Place chocolate in the top of a double boiler over low heat
  9. Stir until melted, making sure that no water reaches the chocolate
  10. Drain apple wedges on a paper towel
  11. Carefully dip apple wedges, holding from the skin side
  12. Alternately, you may use a spoon to spread the chocolate over the wedges, holding over the broiler to allow any excess to drip back
  13. Place on the prepared baking sheet and sprinkle with quinoa mixture, pressing lightly so that it adheres
  14. Refrigerate for 20 minutes, or until set.
