  • 2 cups chow mein noodles, divided
  • 1 can cream of chicken soup
  • 2 cans cream of mushroom soup
  • 3 green onions, chopped
  • 1 pound ground beef
  • 1 package frozen stir fry vegetables
  • 1 large onion, chopped
  • Soy sauce, salt, pepper, and a pinch of sugar to taste


  1. Preheat oven to 350F
  2. Brown ground beef and onion
  3. Place in the bottom of a large casserole dish
  4. Mix in soups, frozen vegetables, half of the green onions, seasonings, and 1 cup of chow mein noodles
  5. Bake for 30 minutes
  6. Remove from oven and top with remaining chow mein noodles
  7. Return to oven and bake for additional 15 minutes or so, until hotdish is hot and bubbly, and chow mein noodles are browned
  8. Top with remaining chopped green onions and serve.
