  • 3-4 T Butter
  • 12 oz. Carrots, peeled, cut into 1/2" slices
  • Parsley, chopped, to garnish
  • 1 lb Parsnips, peeled, cut into 1/2" slices
  • Salt & Pepper to taste


  1. Place the carrots and parsnips in a pot and cover with water
  2. Bring to a boil
  3. Reduce the heat to a simmer and cook until the vegetables are tender, about 15-20 minutes.Drain the vegetables and place them back in the pot
  4. Add the butter(reserving a little for garnish, if desired) and the salt and pepper
  5. Mash the vegetables together
  6. Check seasonings.Place in a serving dish and garnish with a little butter and chopped parsley.
