  • 4 carrots, peeled
  • 1/2 teaspoon grated fresh ginger
  • 1 tablespoon honey, optional
  • 2 Gala or Pink Lady apples, cored*
  • 1 1/2 cup plain Greek yogurt


  1. Preheat oven to 400°F.Chop carrots and apples into 1-inch sections
  2. Place on a parchment paper lined baking sheet and place in the oven
  3. Roast for 35 to 40 minutes until tender.Transfer the carrots and apples to a food processor or blender
  4. Add ginger and 1/4 cup of water
  5. Process until smooth, about 1 to 2 minutes.In a large bowl combine carrot/apple puree, yogurt, and honey (if using); stir.Serve immediately or pour into the Little Green Pouch and enjoy!
