  • ½ tsp black pepper
  • 2 eggs
  • ½ cup fresh basil, finely chopped
  • 3 cloves garlic, minced
  • Marinara sauce, for dipping
  • ¾ cup Mozzarella cheese
  • 1 cup onion, finely chopped
  • ¼ cup Parmesan cheese
  • ½ cup quinoa, uncooked
  • ½ tsp salt
  • ½ cup wild rice, uncooked


  1. Cook the quinoa and the wild rice according to the package directions
  2. Allow to cool slightly before mixing with the eggs.Preheat oven to 350 degrees
  3. Prepare 12 cup muffin tin with a generous amount of non stick spray.In a large bowl combine the slightly cooled and cooked quinoa and wild rice
  4. Mix with the rest of the ingredients (expect the marinara)
  5. Mix until everything is well combined
  6. Spoon mixture into the prepared muffin tin
  7. Using a spatula or the back of a spoon gently press down, and flatten out the mixture
  8. This should fill up all 12 muffin cups.Bake for 20-25 minutes or until starting to turn golden brown
  9. Remove from the oven, and allow to cool for 10 minutes before removing from the pan
  10. Serve with marinara sauce for dipping.
